ONLY ON BRIEF RESPITE PER YEAR: ON CHRISTMAS DAY.<\/p>\n<p>L\u2019Express, open daily from 8 a.m., is still serving its clientele at 3 a.m., a rarity on the Montr\u00e9al restaurant\u00a0scene. But access day and night is only one element of the success of this Montr\u00e9al institution. L\u2019Express\u00a0knows and caters to the tastes of it\u2019s large and loyal clientele, made up principally of businessmen and\u00a0artists, but not solely, according to long time manager Mario Brossoit. The owners &#8211; his sister, Colette, Pierre\u00a0Villeneuve, an accountant and a physician &#8211; have been there from the beginning and share a long-term\u00a0vision for their French bistro: a \u2018semi-bourgeoise\u2019 kitchen in the words of Mr. Brossoit, offering classics such\u00a0as duck confit, fresh salmon, and hanger steak and frites. If these dishes are fashionable fare in restaurants\u00a0today, they were not back then: L\u2019Express was in the vanguard. The resto was also a pioneer in introducing\u00a0a wine list featuring private imports, wines seldom on offer in the early 80\u2019s. The restaurateurs showed flair\u00a0and boldness in situating in the heart of what has become known today as the Plateau Mont-Royal. At the\u00a0time this stretch of rue Saint-Denis contained more rooming houses than trendy shops. Consistency in\u00a0product quality and service has enabled this bistro &#8211; where Chef Jo\u00ebl Chapoulie has ruled the kitchen for\u00a0over twenty years &#8211; to remain a blue chip referral that many hotel concierges share with city visitors, without\u00a0reservation! Mr. Brossoit explains the recipe for the enduring success of L\u2019Express: \u00abWithout a doubt all\u00a0aspects of the experience are carefully considered, from value to the attentiveness of service, from the\u00a0quality and presentation of the plate, to the human interaction with our customers, it\u2019s really a multitude of\u00a0things, the exact details of which we can never lose sight of; it should always be the same experience, each\u00a0time a customer visits, we start anew. Nothing is assumed. Even with our \u2018regulars\u2019 returning for the\u00a0hundredth time, the worst mistake is to take them for granted. We must always do a little more, because\u00a0customers deserve a little more.\u201d Today especially, in the era of social networking and the blogosphere, the\u00a0consumer gets to tell the tale; care and discipline are required more than ever. \u201cOne must always listen\u00a0attentively to customers and be attuned to changes in fashions and lifestyles,\u201d says the manager and\u00a0personnel director.
