First there was Paris, foll owed by Hong Kong, Tokyo, Las Vegas, London and New York. World-acclaimed chef, Joël Robuchon, is now bringing his original cuisine to Montreal, with a new restaurant opening December 7.
There are no shortage of restaurants in our fair city, but Robuchon’s move is proof that Montreal’s reputation as a hub for fine food extends far beyond the borders of Quebec!
For his adventure in La Belle Province, the 71-year-old French chef, who has collected 28 Michelin stars over the course of his career, has chosen the Casino de Montréal. L’Atelier de Joël Robuchon will set up shop in the old Quebec pavilion from Expo 67, previously home to restaurant, Via Fortuna. The space now seats 56, including 36 at the counter.
Chef Robuchon built his reputation with traditional restaurants, complete with white linens, silver cloches and table-side service; but the “culinary workshop” concept, which he has been marketing around the world since 2003, is more relaxed.
Fabulous décor and a friendly atmosphere welcome diners, who are invited to sit at the counter and watch chefs at work. Sharing in the experience is an essential part of the Atelier de Joël Robuchon concept.

Chef Éric Gonzalez, a rising star in the Montreal dining firmament, will have the honour of running the kitchen. The executive chef, whose experience extends from Ferreira and Laloux to Auberge St-Gabriel, will use his talents to highlight local products.
“We can’t wait to offer diners a fabulous menu featuring items like quail, caramelized with duck foie gras and served with mashed potatoes; langoustine in truffled ravioli with braised green cabbage; or black cod in a ravigote sauce with Malabar black pepper and baby spinach!” explains Chef Gonzalez.
The menu will be seasonal, and patrons will be able to build their meal according to their appetite, as the menu will include small portions of big classics.
